I call into question the phrase 'ubiquitous in Cumbria' as neither I, or any of my family who are lifelong Cumbrian residents, who had never even heard of this condiment until recently. As a Keswick resident and a former chef I may add that while I was working in various well known lake district hotels, I never made any Cumberland sauce or saw anyone else do so.[reply]
