Yeast in Naan?[edit]

Just checked with someone with experience cooking in India. The recipe for Naan does include yeast—or some other leavening agent.

Name of bread from Kerala[edit]

Last night in Fort, Mumbai we ate a meal at a small restaurant with only local people. We had paneer masala and bogi chili and they came with a type of doughy bread that was round but stringy rather than solid. I asked the name but could not remember it other than that it contained the word "ali" plus a few other syllables and I was told that this bread originates from Kerala. Any idea what this bread is? Does the south indian dish dosa qualify as bread?[edit]

Going by the definition of bread, (http://en.wikipedia.org/wiki/Bread, 'Bread is a staple food prepared by baking a dough of flour and water.') Dosa does not qualify as bread. It is prepared from a batter, not dough, of rice and lentils. Moreover, dosa is never baked, but roasted on an iron girdle with oil. Taftan in UP?[edit]
