My name is Nancy Poian, I was the Controller at Palladins at the Time Hotel in New York City. Jean-Louis, was more than a chef, he was also my friend. He had his moments, but he was always cheerful and sometimes funny, he was unabashed, and sometimes he would change his clothes in front of all present in the office. One time posing for I believe it was cusineart, he was the naked chef with only the mixer to cover him, with a big grin on his face. We all still miss him. After he passed, another Jean-Louis took his place, also a great chef, that was Jean-Louis Dumonet.
