Pink Elephant can also mean something unforgetable, or a strong memory. Derived from 'Don't think of Pink Elephants'. Of course in that context it is not a euphemism.

I believe there was an episode of The Simpsons where Bart and Lisa had a helium balloon in the shape of a pink elephant, which floats off into a company building with some business men trying to come up with a good homosexuality symbod. The pink elephant balloon passed them, but they deconsidered it.

Shouldn't someone add the origin of the phrase in somewhere?
