Litson manok (Roasted chicken) typically cooked over an uling (charcoal) is a Filipino favorite food and is available almost everywhere. The Litson manok craze started at mid 80's, and a lot of Filipino's demands this savory street food. The chicken is usually stuffed with tanglad (lemon grass) mainly used for its scent and marinated with different sauces. Multiple chickens skewered on a long metal spikes, rotating gradually all at once on a flaming charcoal.

Every stalls have its own different style of cooking. The quality and taste can vary in terms of the price of the chicken, examples of popular Litson manok varieties are Reyal, Andok's, Sr. Pedro, Chooks-To-Go and Baliwag Lechon Manok. The chicken goes well along with a Filipino homemade sauce with its unique orange-like color or a common everyday sauce "Mang Tomas" and some atchara (pickle made from grated unripe papaya) on the side.

Year after year, Litson manok stalls sprouting in every street corner and are accessible everywhere. Its a popular food whenever you need as soon as possible for lunch or dinner.
